Ceviche is a citrus-marinated seafood dish.  Ecuador is arguably the birthplace of the dish and it is mainly eaten in the coastal cities.  There are different variations of the dish, most typically being of shrimp, although fish and clam are also common.  Ceviche is served with plantain chips, "chifles", or popcorn.

Caldo de Bolas is a soup with balls of stuffed plantains.  The balls are made of green plantains, and are typically stuffed with meats, raisins, eggs, and peas.  The soup is typically a cabage and pork broth.
